Broccoli Super Salad

Another recipe post for your dining pleasure. We had this tuesday evening with Ham & Macaroni and Cheese. It's one of Graham's favorites so I usually make a full recipe even though it's just the two of us. I think it tastes even better the next day.

1 bunch broccoli
1/2 C. Roasted Sunflower Seeds, Unsalted
1/2 C. Raisins
1/4 C. Chopped Red Onion
3 Strips Bacon, fried and crumbled
2 C. Cubed Mozzarella Cheese

Dressing
1 C. Mayonnaise
1 T. Vinegar
1/4 C. Sugar

Modifications
I always leave out the red onion as neither Graham nor I are fond of raw onions. You can substitute Monterrey Jack for the Mozzarella cheese. On tuesday I used 1/8 C. Splenda instead of sugar. I generally use less Splenda than sugar because it sure seems to be sweeter even if they say it measures cup for cup. I couldn't tell a difference but next time I plan to increase the splenda to 3/16 C. since Graham said he preferred it a bit sweeter than it was.

The Milk Hates Me Corner
For those that are lactose intolerant this is a great salad recipe because the dressing doesn't have any dairy products. There's nothing worse that seeing a great looking pasta or vegetable salad somewhere only to find out the dressing is made with milk, buttermilk, sour cream, etc. If cheese is a concern that can also be left out. I personally don't feel like it contributes that much but then again, I'm not that big on cheese.

Thank you very much. As far as the labels it's part of the new Blogger beta. I had been thinking the other day I wish there was a way I could label posts for searching later on and voila, there is!

how did you get it to say SCRIBBLES instead of comments?????? how cute? I spose that's alsoa part of the new blogger beta, which I haven't downloaded. Is it worth it?

Yep it's part of the Beta. I think the differences between the regular blog and beta blog are all for the better. I haven't found anything thus far I have disliked and the upgrade process is very easy. One thing to keep in mind is you have to have a google account for the beta version. (If you have a gmail account, that works.) If not, it's easy to set one up.

Here's how I changed mine to say scribbled & scribed:
Upgrade to Blogger Beta
Click on Manage Layout
Click on Edit in the Blog Posts box
You'll get a new window with a bunch of things you can change. I changed Posted by to Scribed by:
and comments to scribbles.

I logged in under the Beta version and it was as though I had to create a whole new blog??? If I don't have to do that, I'll pursue it a little bit more.

I think you log in as you normally would and then on the main page there's an option to upgrade your blog to the beta.

I will do my very best to do that this afternoon. I have tons to say and I usually think about doing it during the morning but that's when I'm at work and I don't think blogging on company time is looked upon favorably.
